Vegan Soybean patties with Tofu

This was the most delicious vegeterian/vegan patties I ever made! They melt in the mouth but are solid on the outside and tastes like heaven! I used soybeans but you can use which beans you want.
These are free from gluten and ofc dairy and egg.
Do them like this:
350 g of Silken tofu
250 g soybeans (or other beans)
1 red onion, chopped
3 garlic, chopped
1 tbsp of fresh coriander
1 tbsp of Renée Voltaires "hey bombay" bouillon (or some other bouillon, but then you may want to add some more spices)
1 tbsp of psyllium husk (or more depending on the batter)
2 tbsp of corn starch (or wheat flour, but then they will no longer be gluten free)
Just mix everything together in a mixer and let it rest for about 5 minutes. Heat up some oil (i used lemonoil but any will do) in a pan and fry thin patties untill they get a nice colour, then turn them over and fry on the other side.
I served mine with cooked buckwheat, salad, baked carrots and beetrots, mushrooms and some baby tomatoes.

Zoats with Peachflavor

Zoats is one of my favorite breakfasts. It may sound descusting to cook zuccini in your oatmeal but the zuccini dosent give any flavour, it just make the volume bigger. And of you add one eggwhite to the oatmeal, become the oatmeal really creamy and delicious. Today I cooked my zoats with a peach, and it turned out so GOOD!!!
Do it like this:
1/2 cup oats (1 dl)
1/2 cup grated zuccini
little salt
1 peach (without kernel ofc)
1 cup water
2 tbsp of egg whites (or 1 eggwhite)
Mix the water with the peach in a mixer. blend it togheter with oats,zuccini and salt and cook it for a while. At the end, stir down the eggwhites and serve with quark/cottage cheese, another chopped peach and some nutbutter sauce (I just blend 1 tbsp of nutbuter with 0,5-1 tbsp of water and blend untill smooth)

Granola with Orange and coconut

For a couple of days ago i made a new granola with the flavor of orange and coconut. For those of you who cant understand swedish I've made a couple of them recently. This one, togheter with the other ones, are nuturaly sweetened, but the diffrence here is that I used Concentrated orange juice instead of Ageve,honey or dates.
The granola become really delicious and crunchy, and its free from gluten, milk and egg!
Granola with orange and coconut:
2 dl, 1 cup of quinoa flakes
2 dl, 1 cup of buckwheat flakes
2 dl, 1 cup of glutenfree oat flakes (you can substitute all of the flakes with regular rolled oats, but then its no longer gluten free)
2 dl, 1 cup free of choice seeds (sunflowerseeds, pumpkinseeds, etc)
1 dl, 1/2 cup free of choice nuts (I used hazelnuts)
1 dl , 1/2 cup unsweetened coconutflakes
0,5 dl, 1/4 cup of linseeds
1 dl, 1/2 cup concentrated unsweetened orange juice (if you live in sweden, i used Jo apelsinjuice)
2 tbsp of coconutoil
Blend all dry ingredients in a bowl. In another bowl, melt the coconutoil ( I used the microwave) and blend it with the orange juice. Combine the two bowls and stir until blended. Set the oven on 175 c or 350 F and put the granola on a plate with baking papper and put it in the bottom of the oven for about 20-40 minutes, but take it out every 5 minutes and stir so nothing yets burnet. continue untill the granola is completely dry and gets a nice brown coulor. Let it cool before you transfer it to a jar.
